For centuries man has been baking bread so in my quest to feed my family whole food I decided to hop on the wagon. Really, how difficult can it be? I set out researching bread makers because realistically I knew hours in the kitchen kneading was simply not going to happen. I decided on the Panasonic SD-YD 250, placed my Amazon order and waited out the two-day delivery period. During that time I researched multi-grain recipes asking our local Mothers’ Club, Facebook and Yahoo! Answers for suggestions. I was feeling pretty confident when I unpacked that bread machine last Friday. Five hours later this is what I got:
Yikes! Not easily defeated I tried again, and again, and again. My husband dutifully stopped at the grocery store and picked me up not one, not two, but seven packets of yeast especially made for machines. I made yet another trip to our local market for my organic ingredients and tried again and again. Each time the results got marginally better. At least the dough was rising! I was getting there but had yet to make it. Today after my son and I returned from Whole Foods now armed with the secret ingredient, vital wheat gluten, I had to try again…and again…and again…and finally my reward!
Yippee! The recipe I settled on is below but I’m still looking for a truly 100% multi-grain as I’d love to find a way to omit the white flour. If you have one that works for you please send it along. I’d love to try it out!
Multi-Grain Sandwich Bread
1 and 2/3 cups milk
2 Tbsp olive oil
1.5 tsp salt
2 Tbsp honey
2 cups organic whole wheat bread
1/2 cup unbleached white
1 and 1/4 cups oat bran
1/4 cup amaranth and ground toasted or raw sunflower seeds
2 Tbsp vital wheat gluten
1 packet active dry yeast (fast rising for bread machines)
